Ingredients
2 20oz. cans of pineapple chunks or rings (in juice)
2 large jalapeno peppers, stemmed & seeded.
1 tablespoon jarred chopped garlic
Salt
Black Pepper
Instructions
- Drain the pineapple juice into a bowl. Set aside.
- Put pineapple, jalapenos and garlic in a blender.
- Blend. Add juice from step 1 if more moisture is needed.
- Add Salt & Black Pepper to taste.
- Serve with chips & cold cerveza.
It sounds simple, it sounds like a non-recipe, and hell, it may even sound gross; but this 5 minute snack tastes great and surprises guests. It's perfect for surprise company - you pull garlic from the fridge and a couple of cans from the pantry, and you are set. You can let your peppers dry out for storage, or keep dried peppers just for this. I always have a couple of peppers in the kitchen, so it's not an issue for me. You can substitute pickled jalapeno peppers (the kind that come in a jar) if you like, but remember to compensate for the sweetness added by the vinegar from the jar.
